Cherry,Macadamia, White Chocolate Cookies [Aug. 2nd, 2007|07:17 pm]

Cookies :
1 1/4 C all purpose flour        1/4 TSP baking soda
1/4 TSP salt                            3/4 C unsalted butter, softened
1/2 C sugar                               1/2 C packed light brown sugar
1 egg                                         1 TBS lemon juice
1 TSP vanilla extract               3/4 TSP almond extract
1 C Macadamia nuts               1 C white baking chips
3/4 C dried cherries

4 oz chopped white chocolate ( do not use white baking chips, they do not melt well )

Heat over to 350 degrees line 3 baking sheets with parchment paper
In med bowl stir together  flour, baking soda, and salt. In lg bowl, beat butter, sugar, and brown sugar @ med speed 1 minute or until blended. Beat in egg, lemon juice, vanilla and almond extracts until blended( mixture may look curdled )Reduce speed to low, beat in flour mix just until blended. Stir in macadamia nuts, white baking chips and cherries. Drop tablespoons of dough 2 inches apart on baking sheets.
Bake one sheet at a time 12 to 14 minutes or until edges are light brown. Cool on baking sheet on wire rack. Remove from sheet and put on wire rack.
Glaze :
place chopped white chocolate in small microwave-safe bowl. Microwave on med 1 to 1 1/2 minutes until almost melted. Stir until smooth. With a fork, drizzle over cookies.

white baking chips are referred to as white chocolate chips. For best flavor, look for chips that contain cocoa butter
Makes about 3 dozen cookies

trust me... you will win over sister in law, hands down, every time with these cookies... lol. i only make them at Christmas because if i didnt i would blow up like a balloon from eating so many ~grin~
about a month before Christmas, everyone starts bugging me about when i am going to make them...friends, family, neighbors.. we do a basket filled with all kinds of homemade treats for the neighbors at Christmas time, and i add a nice homemade card. the whole basket ( you can buy nice ones at any dollar store ) is then wrapped in cellophane and tied with a wire edged Christmas type ribbon. i probably make about 80 dozen cookies at Christmas :)
